I have hdmi connected but all I get is stereo-sound even when I play 5.1 stuff over the VLC player. How can I fix this?
 
What adapter are you using?

Either you have to turn on or set to auto the "force detection of dolby surround" option under VLC audio preferences, or it is a problem on your receiver. Or it could be the adapter itself. Some of the cheaper ones are known to be 'get what you pay for'.

I don't believe iMac has an option to even set.
 
Again, you're not really giving any info to go by.

Have you tested it with your MBA?

Have you messed with VLC audio settings?

If you hook up another HDMI capable device (such as a game system or blu-ray player) to the same exact input you're using for the iMac, does the problem persist?
