some of my MP3s are much louder than others, is there a way that iTunes can adjust all MP3s to the same volume?
 
You can use Sound Check, under iTunes Preferences>Playback. Third option down. It won't affect the file itself, just the way it's played.
 
Sound Check is quite poor IMO. It finds the lowest volume track and brings everything down to that level. So if you have a very quite song then the rest will be too.

iVolume does a better job, but it's not perfect.

I think it's beyond "quite poor". I find that Sound Check does very little. I'm thinking of giving iVolume a try (back in my Windows days, I used something called mp3gain, which worked very well). Can anyone attest to the effectiveness of iVolume?
