Have an iPhone 3GS. Running iTunes on XP (PC).

Where is the backup of my iPhone stored? Can it be exported for archiving or copied to prevent it from being corrupted (redundant copy)?

I tried to create a backup using a the process detailed below, but when I tell iTunes to "restore" it demands contact with the iTunes store, then wants to download iOS 5, which is a problem as the PC the phone synchs to is on dial-up. :(

I'm afraid to let it go beyond this point as the guide doesn't say anything about iOS updates being first, and all I want to do is let it make the backup and then abort before it goes into restore.

So, I'm wondering if the most current backup made when you synch the iPhone is just stored in a sub-directory I can just copy the contents into a ZIP file.
