Which one of the many ip addresses is the senders machine IP address on received mail under thunderbird (by clicking long headers in view)

Either the first one in the chain of Received headers (the one with the earliest timestamp) or potentially none of them if it was sent from a webmail interface.
 
But if its a dynamic IP assigned by the ISP, i will never see the machines IP on this transcript ??

There's no 100% method to find the sender's IP without discussing it with the ISP involved and they likely won't be helping unless you have a court order.
 
I cant help you, but theres plently out there if you just google and invest some time reading / learning about it im sure..
