In the past, one could press on the "." key on the iPhone or iPad and it would bring up a list of options: ".com", ".org", and so forth. iOS 26 seems to have done away with this handy feature. Is there a way to activate it?

Nope. Presumably this is one more dumb bug in a release that is full of them.
 
It does show up for me when the field is asking for an email address - I did this just this morning on my iPad when logging in to a web site.
 
iPad Pro running iPadOS 26.01
When I am in a text box that would require a .com, the “.com” appears in a key just like the regular keys on the keyboard next to the space bar. When not in address field the key changes to “.?123” which switches to the numeric key board and then it shows ‘ABC” for switching back.
