Hi.

My wife has an iPhone that used to sync her contacts and calendar data with her work Exchange server. She has since left her job, and thus no longer has access to the Exchange server, but she now has a whole lot of contacts and calendar data on her iPhone that she'd like to transfer to her Mac.
When she syncs with the Mac, it doesn't transfer any of the Exchange data.

Is there some way for her to get all that data off her iPhone and into Address Book / iCal?

Snow Leopard?

If you have Office for Mac use Entourage instead of Mail/Address Book/iCal

If you don't have it, try using Thunderbird for the contacts and mail.
 
Yes, Snow Leopard.

I don't have Office.

And I'm not sure I understand how this helps. How can I get the contacts off the phone into Thunderbird? I still need to sync the phone, and syncing simply doesn't copy back the Exchange info.
