How to get iPhone to stop suggesting how to spell?

How do I get iPhone to stop changing words that I type? I need it to stop while I write emails or whatever in German. The US dictionary is really no good when it comes to typing a different language.

If you feel like accessing and adding "fixes" that may get deleted after a software update, then you can do so.
