Unfortunately, running the line:

sudo mount -uw /

does not work, and I am given error message:

mount_apfs: volume could not be mounted: Permission denied mount: / failed with 66

SIP is disabled, and this was tried with root user both enabled and disabled. Possible alternate problem/solution ?

I’m looking to Disable 'kernel_task' which is throttling my CPU because the thermal sensor on my logic board is damaged. I’ve tried cleaning the logic board which ultimately didn’t work.

I don't think you can disable kernel_task, it is an essential process. it would amount to disabling the operating system.
