How to get rid of High Sierra Public Beta?

So I installed the public beta on my laptop, don't like it, and trying to go back to Sierra.
I followed the steps here : https://www.imore.com/how-do-clean-install-macos-sierra

I downloaded Sierra, made a bootable flash drive on my thumb drive, booted up with command R, under disk utility deleted the main partition, and when I go to reinstall OS, it always wants to install High Sierra Beta, not MacOS.

Any ideas?

command+R is the recovery partition... which was updated to HSierra, not your flash drive. Hold down option on boot and choose your flash drive.
