Right, so the dmg. file has almost finished installing from Apple. Once this has installed, what do I do next?

iPhone 5 and using an iMac running mountain lion.

simply press alt whilst clicking update in itunes. Pick the ipsw and update.

If you're coming from a jailbreak, update and restore to latest public version. Then just update to iOS 7, not update and restore. If you're already on latest release, just do update.
