How to install mail and other jailbreaked apps

I just jailbreak'd my I touch, yippeeee I'm free, now that I'm out, where do I go?
Where do you go, or how do you install such programs as mail, weather, and other apps/ or iphone apps? I have run the installer program, but just see a couple of programs in each catagory, where is the mail?
