Sorry I am not up to date with jailbreaking.
I jailbroke my ipod touch 2g with firmwire 2.2.1
I want to update the firmware to 4.2.1 and jailbreak it.

Do I have to unjailbreak it, update it, then rejailbreak?
Or can I just update it while it is still jailbroken?

Plug your iPod into iTunes and click "Restore". WARNING: This will erase its contents. Make sure you have a backup of your media and data in iTunes. Then download greenpoisi0n and jailbreak your iPod.

Wont it restore to 2.2.1?
 
It shouldn't. You could click the update button instead. That should downloaded 4.2.1, then restore your iPod to 4.2.1.

So...
Click Update (updates jailbroken 2.2.1 iTouch to 4.2.1)?
Click Restore?
Then Jailbreak with greenpois0n?
 
1. Update to 4.2.1 it erases jailbreak
2. Jailbreak using Greenpoison
3. You have ios 4.2.1 jailbroken
