You know when you try to delete an app either from the phone or from iTunes, you get a warning that says the data will also be deleted with the app.

When you restore the phone, you wipe everything clean, apps and data. Then, after you restore from backup, you move app data to the phone, but not the apps. Apps move when you sync. I have tried stopping the sync so none of the apps moved yet. Then I just reinstalled one app from the phone and all data was there. So my question is this. If I do this and stop sync and only download apps that i really need while retaining the data from all my previously used apps. Will my data be safe and will I be able to just reinstall apps on my phone one by one and have them access app data from before? Anyone ever tried this?
