How the heck do you turn that off?

I have in my address book my grandma listed as "Grandma", and when I get emails from her it changes to Grandma Lastname. This in turn syncs with my iPhone and screws up my contact list.

Same applies for Dad, Mom, etc.

Ok, it seems that when I reply to one of her emails it tacks her last name on inside address book. Same would be for dad, mom etc. I thought it when I received them but I just tested with one I sent, and bam! her last name popped up after I shot the email off.
 
NOBODY has this problem?

My contacts keep changing because Mail is doing something when it gets a new message from a contact. It keeps adjusting the senders name in my address book.

Edit the address book entry, click the "Company" checkbox, and put the word Grandma as the Company name rather than the First/Last name.
 
I would guess to turn data detectors off. Why is this such an issue?, Why don't you put 'Grandma' as her nickname?

Will the Nickname show instead of First/Last in address book? *Edit: nope!

It's an issue because I have it set the way I want it, and something in Mail keeps changing it when I receive emails from these folks.

Did you try my idea?

Edit: Another idea, instead of leaving the Last Name field blank, what if you put a space in there.
