For the always on feature, I just want the watch face to be the one showing. But instead whenever I am running or lifting, the Fitness app is always the one that shows.

Is there a way for it to run in the background? My old Garmin can.

Yes. I am not running with English user interface, so the following is a direct translation. Go to watch settings->genereal->return to watch->Workout (or what app want to run in the background)->disable return to app, maybe also set to special and Always.

That's neat functionality, didn't know it was there.

You are very close - the English version is Settings->General->Return to Clock

From there, looks like you scroll down the Workout, then inside that scroll to When In Session and turn off Return to App
