You can go to System Preferences / Accessibility / Display / Colour Filters.

Enable colour filters and then play around with the colours and intensities, and you'll be able to create something that looks less saturated.

EDIT: In addition to the above you could also try going into System Preferences / Display / Display Preferences / Colour Profile. Some of the colour profiles available have a bit less saturation than the default one I've found.

In theory, you could use a color overlay with a gray color, but I tied to do it for a few minutes but it seems to only want to use saturated colors. You might play around with it more and get something that works.

Yes, I can't find it out an easy way to slider down the saturation
