How to make folders in Mail?

In hotmail I can make many folders to sort email. I have searched but can't find how to do it in my Mac mail.

Duff-Man says...or, in Mail's sidebar there is a "+" at the bottom with the option to add a new mailbox (along with a couple other options)...oh yeah!
