How to make font bigger in emails

I just hooked up a new iMac and when I open an email I can increase the font size to read it, but when I open the next email I have to do the same thing.

How do I permanently increase the size of the font?

Unless something has changed in Mavericks, go to Mail > Preferences > Fonts & Colors
