When I open pages it always uses helvetica as the default font.

Can i set it to a different one like times new roman as a default.

I mean you can tell it to start up by default to a specific page style, why not a specific font also?
 
You have to setup a template, and you can set pages to use that as the default. There's plenty of info in the help menu if you look for templates. For font, just open a blank document change the font and hit file>save as template. Then in the general tab of preferences select "Use Template" in the "For New Documents" and choose the template you just made and you're all set.
