How to make playlists within iTunes

I'm trying to make playlists in iTunes, for working out, etc, etc.....Can I make playlist in iTunes that transfer to my iPod touch or do I have to use the 'on the go' feature on my touch?

You can make playlists which auto-transfer to your iPod Touch by clicking the + button in the lower left corner of the iTunes window. Also, if you hold Alt/Option while clicking it, you can set certain parameters for the playlist, i.e. all songs from a certain time period, or songs of a certain star rating.
