How to make sure i don't use any activity data?

When i get my Apple Watch series 2 what do i need to do when unpairing my new watch for my activity data

Sorry if this has been repeated.

Guessing the backup you have for example isn't enough to backup everything?

1. Unpair your current watch from the phone (this will force the watch to backup to the phone)
2. Pair your new watch to the phone
   
3. Select the option to setup the new watch from the backup of your former watch
