I currently have a 3g iPhone, how do I move the SMS messages only to the new iPhone?
Can you copy messages to sim card then import from sim to new iphone?

I know I can move these across if I do a backup, then restore to new iphone but that will move all the crap over as well!

You could do this with iPhone Backup Extractor and being jailbroke, I would think. I showed members how to use IBE to then read the SMS's with SQLite Database Browser in a post awhile ago for those not jailbroken, so I don't see why you couldn't take the file created from IBE and post it back in the phone where the SMS's are supposed to be. However, if you're not jailbroke, there's no way to do it.
