I ordered a 120GB OWC Accelsior PCI Express SSD to use as a boot drive for my new Mac Pro. As I understand it, the drive is actually two 60GB "blades" configured in Raid 0.

I'm thinking about partitioning the logical 120GB drive into two drives, one for the boot (~60BG), giving me some extra space.

Is this ok to do? And if so, is there a way to "partition" (or un-Raid) the drive in accordance with the physical drives? Is there any benefit to this approach?
 
The only benefit of "breaking" the raid already used on the accelsior would be to set it up as a raid-1 instead of 0 to get shorter downtimes if one drive fails.

Otherwise I would suggest that you keep the drive as it is and do 2 "software" partitions instead so you keep the raid-speed on both partitions. And, as always, do backups!
