No, you cannot. You can damage/diminish the DLC coating. It Won’t remove the color necessarily, but it could ‘Fade’ it. I would _not_ risk using any polishing pastes or cloths on the black stainless.
What is current best practice for making scratches to the SBSS less noticeable? Is there a go to touch up paint people use or something else? Or just leave it alone?

My thoughts are just leave it alone, even if you could touch it up with paint or marker of some sort, it likely won’t match the stainless and it could stand out.
