Hi. Posting this here in the hopes that I can be helped.

I had a 4s for many years and then purchased a 6s in 2015. It came on version 9.0.2 and I jail-broke the phone following a Google search on how and made sure never to update the phone again after that. Now comes the sad part.

I made the mistake of updating the Youtube app on the phone. I do not know why I decided to update it, but I did...big big mistake! And since then, it crashes often and when it does work, the screen dims after 30-40 seconds, forcing me to tap on the screen to bring it back to regular brightness.

Is there a way to restore my phone using an old iTunes backup from last October. This old backup has the old Youtube app which worked beautifully and I'm praying that there is a way to do this.

Can anybody help? Please tell me there's a way to go back. I don't have an iPad and rely on my iPhone for everything.
 
Just to explain further: how do I restore the phone using the older backup while preserving the jail-break?

Does certain things need to be done prior to or immediately following the restore to do this?

I'd be very grateful for any help.
 
Restoring from a backup works just like it does on a stock phone. Backups do not store any system data, only your personal data. So this won't hurt anything.

It's when you get into Erase All Contents and Settings that things can go sideways.

That said, given that Apple in later versions of iOS/iTunes stopped saving apps into the backup (they redownload) you may go through all this only to find you've redownloaded the same app.

I'm on a older version of iTunes - version 12.3.0.44. Would you be able to tell me if that version saves the Youtube app in the iTunes backup?
