I have various Safari bookmarks on my iPhone. I got a new Mac laptop, and when I enabled iCloud on the Mac, all the bookmarks, favorites, history, etc. from my iPhone were copied over to my Mac. I did NOT want that.

How do I restore the bookmarks, favorites, history, etc. that I formerly had on my Mac?

I am using iOS 10 and Mac OS 10.12 (Sierra).
 
Go into System Preferences > iCloud and clear the check box for "Safari" to stop it from syncing. As for restoring what was there previously, presumably that was nothing (since it's a "new Mac laptop") so you can delete what's there after you've turned off sync.

I would like to share bookmarks between this iPhone and any new iPhone I may buy in the future.

I did have some bookmarks. In particular, I had some "favorites" (when opening a new tab). Now, it shows the favorite and bookmarks from the iPhone.

Might lose those, unless you'd set up Time Machine already. Just have to try it & see.
