I'm having loads of problems with my iphone 3g on 4.01
The 3G and wifi don't work and its very slow.

I want to wipe everything and rejailbreak and UNLOCK.
Can I still do this without updating my baseband (I want 4.1 but there isnt an unlock?) and how do i do it?

Should i plug it into itunes and press restore, or do the restore on the iphone settings menu?

If you don't mind downgrading to 3.1.3, you can do that on a 3G (but not 3GS). Also, I think 4.x.x is slow on a 3G.
