Just use any iTunes alternative backup solution like iMazing that allows you to browse messages in a backup and export them as PDF/TXT. Here's the guide if you will decide to try it.
Also the good part about iMazing is that it supports incremental backups, so old backups won't be overwritten (just make sure to change automatic cleanup options to make sure that old backups won't be deleted in future).
