how to selectively restore from iTunes on Laptop

Hi

I have an iPhone 5, running on iOs 8.0.2. I've backed up the phone to iTunes on my laptop

I have this "other" problem @ plaguing me, so I need reset my iPhone (full erase) and selectively restore.

Say for example I want to restore music, photos, contacts only and NOT apps. Yes, I will / may loose the data stored on the apps but lets say that's ok...

How do i selectively restore from iTunes after resetting my iPhone
