How to Sell Apple Watch Series 3 Cellular

Hello,
I sold my Apple Watch series 3 Cellular + GPS on Ebay. I have the cellular subscription with ATT.

How to do I remove the subscription so I can sell to the new guy? Will I get a new number if I setup the new watch?

Also, can the buyer use the Apple Watch with any carrier? Is there anything special that needs to be done to unlock it?

Apple Watches use an esim, they get sim info copied from your phone. So, unpair the watch from your phone and thats all you need to do.
