I have a 2011 iMac 27-inch running Yosemite. I'd like to designate a folder on my external hard drive that's connected to it so I can access the files on it while I'm out and about. I also have an Airport Extreme - the model before Apple came out with the tower-shaped model.

Can someone point me to a tutorial or tutorials that can help me deal with things like port forwarding and all that?

You have many options. I'll throw this one out there because the instructions are all in one place: OwnCloud

Strike that...on second thought probably not a good idea for you.
