This is what I want to do:
Keep all my media on a 4-bay external connected to my MBP which is connected to network via ethernet.

Use a Mini connected to my TV in another room to have access to all the movies/music/photos on that hard drive connected to the MBP.
So when I use Plex (or similar) on the Mini I can see and access the library of media.

Basically, I want the Mini to share the MBP's external HD. I want the external to be connected to the MBP via eSATA because that is where I do my editing and encoding.

What's the best way to do this?:confused:
I am able to run an ethernet cable to that room if that helps...

Might be simpler than I thought...

Share the folders.
Run ethernet cable to Mini.
Have Mini mount the folders at start up.
