So my dad has switched from an iPhone to a non smartphone ... trouble is he’s not receiving anyone’s texts as they’re all still going to his iPhone. How can we stop that? If possible he’d still like to have his iPhone for FaceTime calls (still works via WiFi without a SIM card) but not iMessage

However, you can't have it both ways - if you de-register the phone number for iMessage, you're also de-registering for FaceTime. FaceTime will still be registered for the email address, however, so as long as FaceTime calls are addressed to his email rather than phone number, he may still receive them.
 
I’ve deregistered iMessage by putting his SIM card back in his iPhone and turning off iMessage in settings but when u text him it still goes as an iMessage and he doesn’t receive it unless I hold the sent message and choose “send as text message”. But then the next message still goes as an iMessage.

Any ideas..?
 
Have him text you from his flip phone. Then reply to that text and see if it goes as sms.

if you are texting from previous message threads that were iMessage, it may be picking up his iCloud address.

You can try the other online method to deregister as well (which is also mentioned in the earlier linked support article from Apple).
 
For the sender of messages..... If you go into messages and press the new message button at the top, and then start typing in the contact of who to send to, does it bring up that person? If so, is there a little arrow next to that person, which you can press and it then gives you the option of where you are sending it...

Does that make sense?

I had similar problems where my daughter would message me from her android phone and then from her ipad, and I could only reply to the last device she sent it to me from.
This has solved that, as i can now choose which device it goes to, either the phone number as green text, or the ipad as blue imessage

I only then have to change it if she messages me from the other device at any time
