I can't seem to do this. I open the music app on my watch and it asks to choose where to play audio and gives me 2 choices, my AirPods or Connect a Device. I chose the 2nd one and a bluetooth title appears at the top and it only shows my AirPods and health devices.

I am on WatchOS 5.2.1 with AWS4.
 
I don't think you can start a playlist of book from your watch(to the HomePod), BUT, once running on the hompod you can control it. I am sure we will see the launch a song or whatever from our watches sooner than later.
 
On iOS 13 you can place your iPhone near HomePod and the audio will transit. We should be able to do that with the watch as well, or just change audio target to HomePod (I notice Now Playing on watchOS 6 has AirPlay icon), or even tell Siri to play it on HomePod.
I hope we can do some of these on watchOS 6. It’d be useful when I get home from a gym and want to throw Podcast I’m listening to HomePod.
