Of course you need to be ‘Connected’ under your mobile data (On Apple Watch/Settings/Mobile Data).
You can see at a glance what connectivity your watch has from control centre (swipe up on watch, and the icon in top left will show whether it’s connected to phone/WiFi/cellular)
On the iPhone your watch is paired with:
Forget your home WiFi
Disable WiFi and Bluetooth (do this in settings, NOT control centre, as it will stay active for the Watch)
After a minute or so, you should get the cellular icon.
It’s also worth noting that you won’t get any cellular ‘dots’ on the explorer face until the watch is ACTUALLY using cellular.
The above is all working fine for me on EE in the UK.
