Hi everybody

I just got iPhone XS. I need to switch from my old 6+ (128GB with only remaining free 6GB) to the new XS.
On the new phone, I need only the contacts, some Apps (with their data). I don't want all those photos and videos (about 80GB) to comsume my memory ( I'm using google photos for backup).

Up to my understanding, device to device transfer will take ALL the data there.

My iCloud is very limited (5GB) with only free 2GB available which is too small to make the transfer,

My question is: Does iTunes allow for PARTIAL SELECTIVE data transfer? and how to do it? (or if there is other easier alternative?)
