How to transition Apple Watch to 6s?

Do we un-pair watch from current phone and re-pair with new phone? I'm assuming we'll keep all our data and settings? Thanks in advanced!

My understanding is: if you want to keep your health data and achievements you must do an encrypted backup of your old iPhone in iTunes first, then restore from that backup on your new iPhone.
