Just pull the SIM and keep it in Airplane mode.
That's what I did with mine.
Gave it to my daughter to use as a Touch.
You don't need a SIM card in there once it has been activated.
Just be cautious of future updates since they will require a valid SIM card to re-activate the phone after the update.
