The airplane mode disables both Bluetooth and WiFi on the Apple Watch? Any way to turn off Bluetooth but keep WiFi? At times, I don't have the phone with me so there is no point keeping Bluettoh on, but I still want WiFi so the watch can pull data from the internet on its own using WiFi (such as weather data)?

No real need (or way) since BT LE uses (relatively) no power when not connected. I all likelihood toggling on/off/on would probably use more power than leaving it on and disconnected all day.

I found the battery life improves a lot if I leave my watch in airplane mode. Does this mean that it is the WiFi and not the Bluetooth (since it uses LE) that is sucking up all of the battery power in my watch, even if I have disabled all of the notifications from the phone?

Wifi uses much more power than bluetooth does. Most of the power draw is from the wifi, not bluetooth.
