When I first got my iPad, it asked me if I wanted to sync where I am in a book between all my devices, so I hit yes. But now I find the feature annoying and want to turn it off. I saw something in the iBook settings that says "Sync bookmarks", is that what I need to change?

there's a checkbox setting in iTunes on your computer, under the Books tab. not sure, but is that what you're looking for?
 
I can't see an iBooks tab in my iTunes preferences.

it's not in iTunes Preferences...
I was talking about the Books tab in iTunes on your computer - you should see it in the main iTunes window once you connect your iPad, then select your iPad on the left sidebar under Devices. it should be towards the right, along with Movies, TV Shows, Podcasts, Photos, etc
 
Under the Books tab in the iPad window, I see an option to sync books from the computer and another to sync audiobooks, but nothing to turn off the feature that syncs the place I was in a book.

That should be it, at least it seems to be what you are looking for from my iPhone.

On the iDevice -> Settings -> iBooks -> Sync Bookmarks -> OFF.

Just turned it off, I'll see if it makes any difference. Something tells me that isn't right, though. I think that's for bookmarks I make in the book, whereas I don't want it to sync the place I was last time I read the book between all my devices.
 
I assume you want it off because you're sharing the book with your wife or friend on different devices.

On the Kindle app it asks you if you'd like to sync to the furthest read spot on any particular device you are using.

Does iBook ask you each time or just do it automatically?

ok, sorry I misunderstood your original request - I thought you didn't want to sync at all between devices. as for turning off the Sync Bookmarks setting, I thought that just disabled saving the bookmark itself, not necessarily the page you're on

It asked me the very first time I opened the iBooks app, but it does not ask me every time, and turning the bookmarks setting off didn't do anything either.
 
Try uninstalling and reinstalling iBooks. If you're lucky, it'll ask you again if you want to sync.
