triple click the HOME button. the option is there.
That's for VoiceOver, OP wants to turn off Voice Control. Not the same thing.
Unfortunately, I don't know of a way to turn off Voice Control. Just be careful not to hold the switch on your headset too long, a short click is play/pause, but a long hold turns on Voice Control.
i still am trying to figure out how to turn voice control off.. i keep my itouch in my pocket in the gym, and it keeps turning on ... i hate it ..... can some one tell me if there is a way to make it not get activated at all
Well, if you jailbreak your iPod, you can install Activator and assign the long hold to some other function. That should keep it from turning on. But I'm puzzled why it should keep turning on when it is in your pocket. How can the home button get depressed and held down accidentally while the touch is in your pocket? Another idea might be to look for a case that makes it more difficult for the home button to be pressed down.

It turned out sweat getting into the remote caused it to malfunction.
Maybe the same thing is happening here...

One person even said his iPhone was sitting on a table when voice control came on and started dialing one of his contacts. Unfortunately, no one seems to have found a way to turn voice control off. Some people seems to have luck by switching headsets, while others said their problems persisted through several different headsets.
