I just installed fan control but I can't seem to uninstall it, as I just did some research and apparently smcfancontrol is much better.

There are a few instructions online but I actually have no clue what they're on about since this is my first mac *blush*

Why do you say that? Mine is indispensable and it's one of the first things I install on new MBP's.

I like the thermal curve throttling that Fan Control has over SMC's one shot one setting until you change modes approach. Properly set, Fan Control should throttle back to 'default', or rather, unmodified RPM's as the CPU temps come down. I'm not aware SMCFanControl does this (unless a newer version does, that I haven't used yet.)
