I've removed the beta profile from watch and the phone, but software update shows that I'm all up to date.

How to update from watchOS 9 RC (20R361) to final (20R362)?

20R361 is the final (and is the same as the RC). There is no 20R362 to update to.

That explains it! Why did I think I read somewhere there was an updated watchOS 9 build? Thanks mate!20R361 is the final (and is the same as the RC). There is no 20R362 to update to.
