How to use 64-bit Java?

I play Minecraft, and use several Java-based websites that run pretty slow on my new Mac Mini. I'm aware that I need to activate (or procure) x64 Java. I go into my Java settings and make sure 64-bit is the first priority, but it doesn't do the trick. What do I do?
