You don't. That isn't released yet. When released, you select "Portrait" mode from the list of options (eg. Pano, Video, etc.)

Well, Apple released 10.1 beta today for dev's, and I've got it. This new feature is in it and it works great! I think the update will be out in the next few weeks since the beta dropped today!

Damn that sucks. That's like when the 3GS was coming out and in the keynote they showed all the carriers and AT&T wasn't on the list. Had to wait the entire summer for MMS to become available.

Excellent...that seems to confirm it will work with just about any foreground object.
