How can I do this? The problem is that the computer only has 1 thunderbolt port. Is there a USB to HDMI adapter out there that works on mac? I don't want to have to plug and unplug the Thunderbolt cable from the display and from the hard drive?

The answer is you pretty much can't. You have to buy a daisy chainable hard drive or wait for a Thunderbolt dock with DVI/HDMI out.
 
Yes there are USB to HDMI adapters available so you can connect your HDMI monitor to your Mac via USB. However, they are expensive, and you should check Mac compatibility very carefully before purchasing.
