I have a jailbroken 4S that I'm trading in to Amazon. My 5 is activated and in use, but I don't want anything with icloud to get messed up or my 4S to get bricked. What's the best way to clear all my personal data from the 4S safely? Thanks!

Personally id software update the 4S via iTunes to iOS6, which will wipe out the JB and then perform a Settings -> General -> Reset -> Erase All Content and Settings on the 4S.

^^ This, but also remove SIM before doing the Erase All Content

You do not want to hit "erase all content and settings" on a jailbroken iPhone. Just hook it up to the computer and restore it from there.

If you do it from the iPhone it will just hang up on the apple screen, and you're going to have to connect to iTunes anyway.

I have a Verizon phone...do I still need to remove the SIM?

You can but it really doesn't matter.
