I have a wacom tablet connected to my Mac and I can use the Ink application to write English characters.

Is there a way to write Chinese characters on the Mac?

You can set the whole OS to use Mandarin if you want, but that's not exactly "writing." Not sure what you mean.

I am pretty sure that you can leave the OS in English and "write" in another language in a word processor if you use the right font and keyboard, but maybe someone who knows Chinese should answer. :)

With the tablet I can use the Ink handwriting recognition to write in English.

If I get you correctly, that would require a handwriting recognition program written for Chinese. Never heard of one, but maybe someone else has.
 
There's an alternative solution now. I've developed an iPhone app called Finger.

It's a chinese handwriting tablet solution for Mac using iPhone or iPod Touch. There's also a free version where you can try for unlimited number of times.
