As we approach a new model, I’m open to possibly going with the LTE version.
My use case would primarily be podcasts and music whether that be Spotify, or Apple Music.
Is it pretty seamless and without hiccups or stutter?

Of course, I could just as well get the non LTE model and just download playlists and podcasts when I’m on wifi.
 
It depends a lot in your cellular providers network. As long as you have a good connection, it’s usually pretty good. I do think that songs stream better than podcasts. Not sure if it’s due to file size or whatnot. But overall things work well.
 
FYI, currently the Spotify watch app is just a remote for the phone, no playback (streaming or stored) on the watch
I think Apple Music will let you do both.

I'm not a big podcast person, but you'll want to investigate those apps to make sure it's going to work how you want it to.

Using Cellular since S3 and Music and Podcasts is pretty seamless. On Music it’s like you’re on WiFi. Podcasts took the initial time to play longer but once it play there are no hiccups.
