How will we have the same data from our old phone onto the G4 iPhone?

I've always just started from scratch when buying the new iPhone each year. (Except syncing apps, music, and contacts.) Is it possible to restore from your old phones backup? Or is this not recommended?

For a new model with a significant change in the OS (e.g., 2.2.1 to 3.0), it's not recommended.

I've done it fine from os 1 on ipod touch right though os 3 on 3gs, without any notable issues.
